Did Elvis eat pineapple cake? I have no idea, but I like to imagine that he did! Pineapple cakes are like my childhood memories of the 1970’s…. fluffy and fun like Farrah, sparkly and real, like Elvis. Farrah and Elvis? that’d be a whole lotta shakin’ going on.

go ahead and preheat your oven to 350℉.

Put the cake mix, pudding mix, eggs, oil and milk into your mixer
or
into a bowl for hand mixing.
I can imagine folks eating this cake on the LoveBoat…. can’t you?

OR
hand mix ~ it will feel & look a little bit ‘dry’,
but that’s alright, mama.

I used coconut oil and a piece of wax paper.
Just use whatever you have, no worries.

boil the pineapple and sugar together.
look at all that yum…..I’m all shook up…..

30 mins at 350℉
They seemed slightly well done to me, however, they were very easy
to poke holes into them.
Get a fork and poke about 100 holes into them.

while they are still piping hot from the oven.
Now let both cakes cool completely… this will take at least an hour.
While they are cooling, go ahead and mix your frosting.

put in a bowl or mixer and mix & mix & mix.

Just mix up the frosting and set it aside.
Try to keep it at room temperature though, so it will frost the cake easily.
All Shook Up time! here’s what you do:

You want to flip your cakes over.
Flip the first cake upside down on a plate.
Then, flip the next cake on top of it.
You won’t need to frost in between the layers, because they will have a layer of pineapple yum between them.
Frosting time:
Just frost the cakes! Add pecans and/or more pineapple yum on top, if you’d like…. ummm… yes please!
